{"id":7031,"date":"2026-08-27T13:20:16","date_gmt":"2026-08-27T11:20:16","guid":{"rendered":"https:\/\/www.jewishlife.co.za\/new\/?p=7031"},"modified":"2026-08-27T13:20:18","modified_gmt":"2026-08-27T11:20:18","slug":"sticky-chicken-and-jewelled-rice","status":"publish","type":"post","link":"https:\/\/www.jewishlife.co.za\/new\/2026\/08\/27\/sticky-chicken-and-jewelled-rice\/","title":{"rendered":"STICKY CHICKEN AND JEWELLED RICE"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<p><strong>STICKY CHICKEN AND JEWELLED RICE<\/strong>\n<\/p>\n\n\n\n<p><em>When all you want is a light chicken dish with lots of flavour, try this one.<\/em>\n<\/p>\n\n\n\n<p><strong>CHICKEN<\/strong>\n<\/p>\n\n\n\n<p>\n  1\u00bdkg deboned chicken thighs or breasts\n<\/p>\n\n\n\n<p>\n  3 Tbls sesame oil\n<\/p>\n\n\n\n<p>\n  3 Tbls vegetable oil\n<\/p>\n\n\n\n<p>\n  2 red onions, cut into eighths with leaves separated\n<\/p>\n\n\n\n<p>\n  1 red pepper, sliced into thin strips\n<\/p>\n\n\n\n<p>\n  250g mushrooms, sliced\n<\/p>\n\n\n\n<p>\n  1 tsp crushed garlic\n<\/p>\n\n\n\n<p>\n  5cm piece of fresh ginger, finely grated\n<\/p>\n\n\n\n<p><strong>SAUCE<\/strong>\n<\/p>\n\n\n\n<p>\n  \u00be cup tomato sauce (ketchup)\n<\/p>\n\n\n\n<p>\n  \u2153 cup soy sauce\n<\/p>\n\n\n\n<p>\n  3 Tbls rice vinegar\n<\/p>\n\n\n\n<p>\n  1 red chilli, chopped (hot)\n<\/p>\n\n\n\n<p>\n  3 Tbls brown sugar\n<\/p>\n\n\n\n<p>\n  2 chicken stock cubes, crumbled\n<\/p>\n\n\n\n<p>\n  3 tsp cornflour\n<\/p>\n\n\n\n<p>\n  \u00be cup cold water\n<\/p>\n\n\n\n<p>\n  Salt and pepper to taste\n<\/p>\n\n\n\n<p><strong>TOPPINGS<\/strong>\n<\/p>\n\n\n\n<p>\n  Sesame seeds\n<\/p>\n\n\n\n<p>\n  Green spring onions, thinly sliced diagonally\n<\/p>\n\n\n\n<p><strong>JEWELLED RICE<\/strong>\n<\/p>\n\n\n\n<p>\n  2 cups rice (basmati recommended)\n<\/p>\n\n\n\n<p>\n  1 cup ready-made crispy fried onions\n<\/p>\n\n\n\n<p>\n  \u00bd cup pomegranate seeds\n<\/p>\n\n\n\n<p><strong>METHOD<\/strong>\n<\/p>\n\n\n\n<p>\n  Preheat oven to 180\u00b0C. Fry the chicken on medium-to-high heat in a little vegetable oil to just brown the outside. Remove from the pan and set aside. To the same pan, add the sesame oil and fry the peppers and onions for 2 minutes. Add the mushrooms, garlic and ginger and continue to fry for another minute. Place the tomato sauce, soy sauce, vinegar, chilli, sugar, chicken stock, cornflour, and cold water in a medium jug and mix well. Pour over the vegetables and stir to combine. Pour over the chicken and bake covered for 45 min at 180\u00b0C. Place the rice on a large serving platter followed by chicken and drizzle with some of the remaining sauce. Sprinkle with spring onions and sesame seeds.\n<\/p>\n\n\n\n<p><strong>JEWELLED RICE<\/strong>\n<\/p>\n\n\n\n<p>\n  Cook two cups of basmati rice as per the instructions on the packet.
